Spätburgunder feinherb

Ingredients

• 4 piecesgoat cheese logs
• 8 slicesbacon (breakfast bacon)
• 150 gmixed salad greens
• 100 gfresh blackberries
• 2 tbspliquid honey
• 2 tbspbalsamic vinegar
• 3 tbspolive oil
• 1 pinchsalt and pepper
• 30 gwalnuts

Preparation

1. 1Thoroughly wash the mixed salad greens, spin them dry, and arrange them on four plates.
2. 2For the dressing, whisk together the balsamic vinegar, liquid honey, olive oil, and a pinch of salt and pepper until a smooth emulsion forms.
3. 3Tightly wrap each goat cheese log crosswise with two slices of bacon.
4. 4Heat a pan without any additional fat and pan-sear the goat cheese packets for about 2 to 3 minutes on each side until golden brown and crispy.
5. 5Place the seared goat cheese on the bed of salad, garnish with the fresh blackberries and chopped walnuts, and drizzle the dressing over the top.
