Ingredients

• 400 mlheavy cream
• 60 gsugar
• 1 pcvanilla bean
• 3 pcssheet gelatin
• 250 gfresh strawberries
• 30 gfresh basil
• 100 mlapple juice
• 2 gagar-agar
• 20 gpowdered sugar

Preparation

1. 1Soak the gelatin in cold water and bring the cream to a boil with the sugar and vanilla bean paste.
2. 2Remove the pot from the heat, dissolve the squeezed-out gelatin in it, and pour the mixture into molds.
3. 3Chill the panna cotta in the refrigerator for at least four hours until fully set.
4. 4For the gel, finely puree the basil with the apple juice and powdered sugar.
5. 5Bring the puree to a boil with the agar-agar for two minutes and then let it cool.
6. 6Blend the firm basil mixture with an immersion blender until a silky gel is formed.
7. 7Dice the strawberries, unmold the panna cotta, and garnish with the fruit pieces and basil gel.
