Rosé off-dry

Ingredients

• 800 gseedless watermelon
• 200 gfeta
• 0,5 bunchfresh mint
• 1 piecered onion
• 3 tbspolive oil
• 2 tbsplime juice
• 1 pinchblack pepper
• 1 pinchsea salt

Preparation

1. 1Remove the rind from the watermelon and cut the fruit into cubes approximately 2 cm in size.
2. 2Remove the feta from the package, drain well, and cut into small cubes or crumble coarsely.
3. 3Peel the red onion, halve it, and slice into paper-thin strips.
4. 4Wash the mint, shake dry, pluck the leaves, and slice into fine strips.
5. 5In a small bowl, whisk together the olive oil and lime juice, then season to taste with a pinch of salt and freshly ground pepper.
6. 6Gently toss the watermelon cubes, onion strips, and mint in a large bowl.
7. 7Fold in the feta or sprinkle it over the salad just before serving so that it retains its white color.
8. 8Drizzle the dressing evenly over the salad and serve immediately while chilled.
